It’s been a long time since we’ve had a Cake Friday, but when I went to a family celebration last week and enjoyed this 2 ingredient cake I just had to share. This Weight Watchers recipe was given to me by my cousin Vicki who has lost nearly 80lbs. I am so proud of her accomplishment and if this cake helped her do it, let’s make some cake.
Ingredients:
1 Box cakemix (any flavor)
1 diet soda (dark colored for chocolate cake, light colored for yellow or white cakes)
Directions:
Stir 1/2 to 3/4 of the diet soda into the cake mix. Bake according to box directions. Cool, and ice with Fat Free Cool Whip if desired.
The texture was a little moister and chewier than a conventional cake, but is a great way to satisfy a sweet tooth. You can also experiment with different flavor combinations. We enjoyed FunFetti cakemix with diet gingerale, but cousin Vicki recommends a chocolate cake mix with orange soda for a fun twist. This is also a great recipe for those who want to make a vegan cake since it has no eggs or dairy in the cake.
Happy Baking,

Yum! It’s always fun to mix chocolate and orange for a Tootsie Roll taste. That sounds like some diet she’s on… ; )
She’s really worked very hard and I am so proud of her. I have a tough time losing 10lbs. I can’t imagine trying to lose 80.
Thanks Suz. Weigh in today was 90.4 lbs and for those counting. 1/12 of the cake is 4-5 points plus. I’m glad you enjoyed the cake.
